What is Fatty Liver (Steatosis)?

About one of every five Americans has a fatty liver, which is also called steatosis. In fact, up to 9 of every 10 diabetics and people with obesity have fatty liver.

In steatosis, pronounced stee-ah-toe-sis, fat accumulates in the cells of the liver. The condition is cumulative, and as more fat is added to the cells, the cytoplasm of the liver is distorted. Soon the nucleus may be distorted and in some cases, the cell may even burst. If you’re a man, three or more drinks a day is the amount that is far too much for the liver to handle. Twelve ounces of 5% alcoholic beer, cooler or cider is equal to one serving. When it comes to wine, 5 ounces of 12% alcoholic wine is one serving. And only 1.5 ounces of 40% spirits is a serving.

Non-alcoholic Fatty Liver Disease

Diabetes is a common disease. In the United States about 200,000 new cases of diabetes are reported each year and the percentage of world population affected by the condition is estimated to be at 5%, with a slightly higher prevalence among women (approximately 25% more females than males). Its prevalence also increases with age, ranging at about 0.5% in the age group under 30 years old and up to 10% or more above the age of 65. About 90% of diabetics suffer from type 2 diabetes, while only a small minority suffers from type 1 diabetes.

Diabetes type 2 is characterized by two problems which are responsible for the increase in blood sugar levels: one is insulin resistance and the other is the lack of insulin secretion. These two defects can coexist or may occur separately. Insulin resistance (that is a typical symptom of the obese diabetic) is the failure of some organs to respond to insulin. As you may already know, insulin is used to push glucose into the cells. In short, insulin is the key that opens the door of the cells. When there is insulin resistance, insulin can not open the door, so glucose can not enter the cells, and it simply remains in the bloodstream leading to increased blood sugar. Normally, the pancreas tries to overcome this resistance by producing even more insulin, but over time this leads to hyper function and functional depletion, which impairs the pancreas ability to produce insulin.

A healthy diet can prevent the development of cardiovascular disease, degenerative disorders and metabolic diseases such as diabetes that are so widespread in the western world. On the contrary the wrong diet can trigger these diseases.

You probably already know the answer, and it’s not the one made from potatoes.

The morals of eating meat are a debate for another forum, and there is certainly an argument to be made for a vegetarian diet for a range of reasons – moral, environmental and health-related. However, if you are not to be convinced that vegetarianism is for you – and many people are not – this certainly does not mean that you need eat less healthily.

There is always a sense that someone who holidays to another country will look for home comforts – in the UK it is a cliché born out of truth that a “Brit abroad” will book into their hotel and unpack then look for the nearest British-style eating and drinking establishments.

If we widen our range, we will usually find that the things we have ignored out of habit are actually quite good. Whether it be a salad with light dressing, or an element of international cuisine, there are some healthy options that have plenty of taste and enough of a “wow” factor to remain part of our diet going forward. Less fat doesn’t mean less fun, unless you have such a low imagination that you can’t bear to be parted from what you are used to.
